Alternative Quinoa Oatmeal

Through the years, I realized that I have an intolerance to eggs. Bummer!!!! Breakfast is all about different ways to combine meat, vegetables, and bread with eggs. All those egg dishes look phenomonal, but my gut wins the battle over my taste buds everytime, lol. This dish allows me to feel like I am indulging in a breakfast food that is not cake. You know what I am talking about....pancakes, waffles, and crepes which are absolutely delicious but not healthy. When I get tired of shakes for breakfast, I turn to this delightful combination of quinoa, granola, and fruit.

Ingredients

I recommend using a rice cooker for the quinoa to save on time and allow you to juggle toddlers or other chores in the home. Quinoa is cooked just like rice in a rice cooker (1 cup quinoa to 2 cups water). Try other fruit combinations such as strawberries, kiwi, and/or blueberries. For a more tasty dish, use higher end granola.
